O IBGE apresenta, nesta publicação, as Tabelas de Composição Nutricional dos Alimentos Consumidos no Brasil, em que são identificados, para cada 100 gramas de parte comestível dos alimentos e preparações, os seus componentes - energia, macronutrientes e fibra; gorduras e açúcar; minerais; e vitaminas. Para sua construção, foram utilizados o banco gerado com os dados relatados pelos informantes sobre a ingestão dos diferentes alimentos consumidos no domicílio ou fora dele, nas áreas urbana e rural de todo o País, e outras fontes de consulta, como a Tabela Brasileira de Composição de Alimentos - TACO, da Universidade Estadual de Campinas - UNICAMP, a base de dados Nutrition Data System for Research - NDSR, da Universidade de Minnesota, publicações técnico-científicas e rótulos de alimentos. O estudo foi realizado em parceria com o Ministério da Saúde. Para a avaliação, compilação e estruturação dos resultados ora apresentados, o IBGE contou com a contribuição de técnicos do Órgão parceiro e, também, com especialistas em nutrição, de reconhecida experiência e competência, mobilizados por aquele Ministério. IBGE presents, in this publication, the nutritional composition tables of food consumed in Brazil, which are identified for each 100 grams of the edible part of food and preparations, their components - energy and macronutrients fiber; fat and sugar; minerals; and vitamins. For its construction were used the database generated with the data reported by informants on the intake of different foods consumed at home or outside, in urban and rural areas throughout the country, and other sources of consultation, such as the Brazilian Table Composition food - TACO, the State University of Campinas - Unicamp, the Nutrition data System for Research database - NDSR of the University of Minnesota, technical and scientific publications and food labels. The study was conducted in partnership with the Ministry of Health. For the evaluation, compilation and structuring of the results presented here, the IBGE had the partner Body technical contribution and also with nutrition experts of recognized experience and expertise, mobilized by that Ministry.
